Madoff Cheese Pie - A Quiche Without A Crust & a short economic history

- 1 lbs feta cheese
- 1 lbs kefir cheese
- 1 cup grated Provalone cheese
- 6 eggs
- 1/2 cup flour
- 1 cup milk
- 1 red pepper, chopped
- 1 half red Spanish onion, chopped
- 1 bunch (1 cup) fresh dill, chopped
- 1 cup grated Romano cheese
DIRECTIONS
- Preheat oven to 375 degrees
- Shave off top of feta cheese, reserve for topping
- Crumble the rest of the feta cheese in a large bowl
- Add the kefir cheese, blend with mixer
- Add the eggs and beat with a mixer
- Add the milk, beat lightly
- Add the grated provolone, stir in mixture
- Add half of the chopped red pepper, spanish onion and dill stir in mixutre
- Pour into greased 12” or 10” cast iron skillet
- Add the remaing toppings; feta cheese, red pepper, Spanish onion, dill, Romano cheese
- Bake in preheated oven for 45 minutes to 1 hour
- Until the top rises and gets a light golden color
- Serves 6 to 8, can be used as a main dish or appetizer, and can be served hot or cold.
