Madoff Cheese Pie - A Quiche Without A Crust & a short economic history

  • 1 lbs feta cheese
  • 1 lbs kefir cheese
  • 1 cup grated Provalone cheese
  • 6 eggs
  • 1/2 cup flour
  • 1 cup milk
  • 1 red pepper, chopped
  • 1 half red Spanish onion, chopped
  • 1 bunch (1 cup) fresh dill, chopped
  • 1 cup grated Romano cheese
  1. Preheat oven to 375 degrees
  2. Shave off top of feta cheese, reserve for topping
  3. Crumble the rest of the feta cheese in a large bowl
  4. Add the kefir cheese, blend with mixer
  5. Add the eggs and beat with a mixer
  6. Add the milk, beat lightly
  7. Add the grated provolone, stir in mixture
  8. Add half of the chopped red pepper, spanish onion and dill stir in mixutre
  9. Pour into greased 12” or 10” cast iron skillet
  10. Add the remaing toppings; feta cheese, red pepper, Spanish onion, dill, Romano cheese
  11. Bake in preheated oven for 45 minutes to 1 hour
  12. Until the top rises and gets a light golden color
  13. Serves 6 to 8, can be used as a main dish or appetizer, and can be served hot or cold.
