Mandarin Orange Coconut Bars for Mother's Day!
INGREDIENTS

  • 1-11 oz. can Mandarin Oranges, drained reserving syrup
  • 1/3 Cup of Butter
  • 1/2 Cup Cane Sugar
  • 1 Tsp. Vanilla
  • 1 Egg
  • 1 1/2 Cups Flour
  • 1 Tsp. Baking Powder
  • 1/2 Cup Flaked Coconut
  • 1/3 Cup Brown Sugar
  • 1/3 Cup Chopped Walnuts
  • 3 Tbsp. Melted Butter
DIRECTIONS
  1. Heat oven to 350 degrees.  Grease a 7″ x 11″ baking dish.
  2. Drain mandarin oranges, reserving the syrup.
  3. Cream butter, cane sugar and vanilla.
  4. Add egg and beat well.
  5. Sift together flour and baking powder.  Add to creamed mixture alternately with the reserved syrup.
  6. Spread half of the batter into the prepared baking dish.
  7. Spoon mandarin oranges evenly over.
  8. Spoon the rest of the batter over, smoothing with a spatula.
  9. Combine coconut, brown sugar, walnuts and melted butter.
  10. Sprinkle evenly over the batter
  11. Bake at 350 degrees 35 minutes or until toothpick inserted in center comes out clean.
  12. Let cool 10 minutes and cut into squares,
