Mango Rice

  • 1/4 Cup clarified butter
  • 3 Tablespoons chopped onion
  • 1 Bay leaf
  • 1 1/2 Cups uncooked long grain rice, such as Basmati rice
  • 1 Cup boiling chicken stock
  • 1/2 teaspoon salt
  • 2 firm ripe mangoes, diced
DIRECTIONS
  1. Preheat oven at 325ºF. In a flame-proof casserole melt the clarified butter. Add the onion and bay leaf, stir for a few minutes, then add the rice. Stir the rice until well coated with butter. Allow the rice to just become golden. Add the boiling stock and salt. Cover the casserole and bake for 18 to 20 minutes. Remove from the oven and stir in the mangoes.
