Manicotti with Cheese

  • 1 package 8oz manicotti
  • 1 3/4 cup part-skim ricotta cheese
  • 2 cups 8oz shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tbls parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 cups 28oz jar spaghetti sauce
DIRECTIONS
  1. Cook pasta according to package directions
  2. Heat oven to 350
  3. In large bowl, stir together cheeses, parsley, salt and pepper
  4. Spoon into cooled pasta tubes
  5. Spread thin layer of sauce on bottom of 13x9x2 inch baking dish
  6. Arrange filled pasta in single layer over sauce, pour remaining sauce over pasta
  7. Cover with foil, bake 40 minutes
  8. Remove foil, bake 15 minutes or until hot and bubbly
