Marshmallow Cream Cheese icing

INGREDIENTS
  • 1 (8-ounce) package cream cheese ,softened
  • 1 stick butter, softened
  • 1 cup melted marshmallows
  • 1 (1-pound) box confectioners' sugar
DIRECTIONS
  1. Cream butter and cream cheese.Meanwhile, melt marshmallows for 30 seconds ..stir and if necessary melt 15-20 seconds longer. Stir, add to butter and cream cheese mixture until incorporated. Add sugar and mix well.
RECIPE BACKSTORY
This is adapted from Paula Dean. I use it on Red Velvet cake and am going to use it on Carrot cake. Some people substitute a jar of marshmellow fluff for the marshmellows.
