- 2/3 cup sugar
- 1/4 cup water
- 3 tablespoons corn syrup
- 2 cups miniature marshmallows
- 3/4 teaspoon vanilla
- dash salt
- Heat sugar, 1/4 cup water and corn syrup to boiling. Reduce heat and simmer uncovered for 4 minutes stirring occasionally.
- Remove from heat.
- Stir in remaining ingredients until marshmallows are melted and smooth.
- Store refrigerated.
Serve over warm sopapillas with honey. Could also be good over brownies or other desserts but it's just too good this way. If you've ever eaten at Pancho's Mexican Buffet, you'll know what I'm talking about here. This stuff is to die for. Alternate way to make it. Mix together over low heat 1 jar marshmallow cream and 2-3 tablespoons water until smooth.
