- 4 beef medallions
- 500 g fava beans
- 250 g peas
- 1 small onion
- 1 bell pepper
- vegetable stock
- olive oil
- If you are using fresh fava beans and peas, remove them from pods. You can also use precooked or frozen ones.
- Cut finely onion and cook it in a skillet with 3 tblsp of oil, add fava beans and saute for a few minutes, then add half a cup of veg. stock. Let them cook for 15 minutes.
- Add peas, parsely, pepper cut into stripes, add some more stock, and continue cooking until all vegetables are cooked. Add salt towards the end, when beans are soft.
- In a skillet warm some oil and cook medallions for about 2-3 minutes on each side. Then put them in the other skillet with vegetables for a few minutes before serving.
