Mexican Cheese Squares
INGREDIENTS
  • Cooking Time: 45-60
  • 5 eggs
  • 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 4 tbls melted margarine/butter
  • 4 oz chopped green chilies
  • 1 cup small curd cottage cheese
  • 2 cups shredded Monterey Jack cheese
DIRECTIONS
  1. Beat eggs in a large bowl.
  2. Stir in flour, baking powder and salt.
  3. Stir in chilies and cheeses till blended.
  4. Pour 2 tbl melted margarine over bottom and sides of 9x9 baking dish or pan.
  5. Stir in remaining 2 tbl melted margarine into cheese mixture.
  6. Pour cheese mixture into pan.
  7. Bake 15 minutes in 400 degree oven.
  8. Reduce heat to 350 degrees and bake another 30-35 minutes until lightly browned.
  9. Cool for 10 minutes and cut into squares.
