Mexican Green Bean Salad
INGREDIENTS
  • 1 lb. green beans
  • 1/2 C. extra virgin olive oil
  • 2 jalapeno peppers, seeded and chopped
  • 1 Tbsp. vinegar
  • 2 Tbsp. lemon juice
  • 1 Tbsp. onion, minced
  • 1 Tbsp. parsley, minced
  • 1 Tbsp. fresh cilantro, minced
DIRECTIONS
  1. Steam green beans until tender-crisp, about
  2. 15 min.
  3. Drain.
  4. Whisk together other ingredients and pour over
  5. warm green beans.
  6. Allow to marinate at least 1/2 hr.
  7. Serve at room temperature or chilled
