Microwave Pudding Cake

  • Batter:
  • 1 c. flour
  • 3/4 c. sugar
  • 2 T cocoa
  • 1 t. baking powder
  • 1/2 t. salt
  • 1/2 c. milk
  • 2 T. cooking oil
  • 1 t. vanilla
  • Top liquid mix:
  • 1/3 c. brown sugar
  • 1/4 c. baking cocoa
  • 1 1/4 c. hot water
  1. Stir together flour, sugar 2 T. cocoa, baking powder and salt. Add milk, oil and vanilla and stir until smooth. Spread batter smoothly into greased 8" round or square microwave safe dish. Combine brown sugar, 1/4 c. cocoa and hot water; stir until well mixed. gently pour this cocoa mixture over the batter. Microwave on high for 7 minutes, or until the center is clean to the toothpick test. Turn dish once during the cooking period. Since microwaves have different strengths, watch carefully, as it might bubble over. I often use a lid.
When you don't have time to make a full dessert and have whipped cream or ice cream available, this is our fall back dessert.
