Mum’s Anise Cake

INGREDIENTS
  • Cake:
  • ¾ C sugar
  • 2/3 C shortening
  • 3 eggs
  • ¾ C milk
  • 1 oz anise extract
  • 2 C flour
  • 3 tsp baking powder
  • ½ tsp salt
  • Glaze:
  • Milk
  • Confectioners Sugar
  • Decorating confections
DIRECTIONS
  1. Preheat oven to 350F
  2. Cream together sugar & shortening
  3. Beat in eggs, one at a time.
  4. Add dry ingredients alternating with milk & anise
  5. Pour into greased & floured bundt pan.
  6. Bake 40 – 45 minutes at 350F.
  7. Let cool in pan 10 – 15 minutes.
  8. Remove from pan and cool completely on rack.
  9. Glaze:
  10. Combine powdered sugar w/a bit of milk to create glaze.
  11. Pour over completely cooled cake.
  12. Sprinkle with decorations before glaze dries.
  13. Enjoy!
