My Chili

  • 1 lb ground beef, 85% lean
  • 1 onion, chopped
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1 large can whole or diced tomatoes
  • 1/2 small can tomato paste
  • 2 Tbsp Chili seasoning mix (see my recipe for this on bakespace)
  • or
  • 4 tsp chili powder
  • 1 Tbsp crushed red pepper or 1/8 tsp cayenne
  • 1 Tbsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1 tsp tsp oregano
  • 1/2 tsp ground black pepper
  • 1/2 tsp cinnamon
  • 2 cans kidney beans, drained & rinsed
  • 1 cup water
DIRECTIONS
  1. Brown ground beef, add chopped onions and peppers to pan. You can use either red or green or a mixture of both. Saute for 5 minutes.
  2. Add spices to meat and then add in the tomato paste and mix well.
  3. Add canned tomatoes and water. If using whole tomatoes then cut them up a bit. I like the whole tomatoes because they are softer.
  4. Simmer for 1-2 hours. Add beans about 1/2 hour before done.
  5. Let cool for 10 minutes before serving.
