My Favourite Banana Bread with Walnuts and Coconut

INGREDIENTS
- Cooking Time: 1 hour
- Preparation Time: ca 20 Minutes
- 5 dl (ca 300g) Flour
- 1 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1 Tsp Salt
- 2 dl (200g) soft Butter (one USA Stick Butter is 125g)
- 2 dl Ligth Brown Sugar (ca 1 cup)
- 1 dl Sugar
- 1 1/2 Tsp Vanilla Essence
- 3 large Eggs
- 1 Tbsp grated peel of Lemon (Make sure it is Organic Lemon)
- 3 big Bananas finely minced with a fork
- 3 Tbsp Creme Fraiche (Sour Cream)
- 1 1/2 dl (75g, 1/2 cup) Chopped Walnuts
- 2 dl (70g) Grated Coconut
DIRECTIONS
- Sift the Flour
- Mix the dried ingredience together.
- Beat the butter and sugar creamy together,
- add the eggs
- then vanilla and lemon peel
- Then mix in the Sour Cream and bananas
- Then little by little the dry ingredients
- Finally the nuts and
- make sure not to stir too long, just long enough to combine all
- Bake in a round form with a hole in it or in a large Loaf Form
- for ca 1 hour at 180°C
- Or until a needle comes out clean and the Kitchen is filled with it´s beautiful smell
- Wonderful with a good cup of coffee, and it is also good to put some cold butter on the slice or even yellow cheese (Gouda is my favourite :)).
