Nasi Goreng (Indonesian Fried Rice)

INGREDIENTS
  • 2 cups uncooked Basmati rice
  • 4 large onions, chopped
  • 10 cloves garlic, sliced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon gallanggal powder*
  • sliver of trasi (dried shrimp paste)
  • 2 teaspoons sambal oelek* (ground Red pepper paste)
  • 3 tablespoons kecap manis sedang* (Indonesian medium sweet soy sauce)
  • 2 tablespoons canola oil
  • 4 eggs
  • 3 tablespoons cold water
  • 2 tablespoons butter
DIRECTIONS
  1. Place rice in large saucepan, add 4 cups of water and cover.
  2. Place on high heat until it boils then turn heat to low until water is absorbed.
  3. Remove from stove and let it cool, then place in refrigerator overnight.
  4. Sauté onions and garlic in oil in a wok or large frying pan until golden brown.
  5. Add ginger, coriander, cumin, galanggal, shrimp paste and sambal oelek.
  6. Fry the combination for about 1 minute. Gradually add the pre-cooked rice, then add the kecap manis sedang.
  7. Maintain a low steady heat, stir constantly until thoroughly warmed.
  8. Beat eggs with cold water in medium bowl. Heat butter in non-stick frying pan.
  9. Pour in egg mixture and fry on both sides until golden brown.
  10. Cut omelet into strips, than cut those strips in half.
  11. Add omelet strips to Nasi Goreng and mix thoroughly.
