Ninnie Marlene's Oklahoma Cheese Ball
  • 1 8 oz. brick cream cheese, room temperature
  • 1 12 oz. bag of shredded extra sharp cheddar cheese
  • 1 small green bell pepper, diced
  • 1 small red onion, diced
  • 1 small jar of pimentos, chopped
  • Garlic salt, to taste (a few shakes)
  • Cayenne, a dash
  • Juice of one small lemon
  1. Mix all ingredients until thoroughly combined.
  2. I use my hands (clean, of course), but you could use a spoon, if you're afraid of getting dirty.
  3. Mold into ball shape, place on serving plate, and chill 2-3 hours.
This is a recipe my grandmother made every Thanksgiving and Christmas. I didn't think anyone outside of my family would love this recipe the way we do, until I made it for my first Thanksgiving with my now husband's family. They raved about it! It has also recently made big waves at my church's coffee hour. I know it's not a specifically Southern recipe, but every time I make it, it takes me back to the flatlands of my childhood. The most important thing about this cheese ball is that is HAS to be served with Ritz crackers- no other kind will taste as good (at least that's my opinion). You can substitute lower fat cream cheese, without sacrificing taste.
