Nova Scotia Baked Beans

  • Cooking Time: 2-3 hours
  • Servings: Makes 6 cups
  • Preparation Time: 8 hours or overnight
  • 2 cups dried beans (I like using soldier beans but any baking bean will do- white bean, sorrenti bean, jacob's cattle, etc.)
  • 3/4 cups fancy molasses (although I often use blackstrap molasses)
  • 2 Tbsp sunflower oil
  • 1 Tbsp dijon mustard
  • 1 small onion (chopped finely)
  • Salt to taste
DIRECTIONS
  1. 1) Soak beans overnight in a pot of water.
  2. 2) Boil beans until they are soft. Depending on how dry the beans were this may take an hour or more.
  3. 3) Drain the beans and place all ingredients in a oven-safe pot with a lid. Bake for 2-3 hours at 350C. Check several times and add water if the beans are getting dry.
RECIPE BACKSTORY
Out in Nova Scotia, where Jim's mother is from, they cook allot with molasses: they put it in cookies, breads and baked beans. Here is the baked bean recipe Jim's Grandma used to make. P.S. If you don't have much time, you can also use canned beans (drained and rinsed) and then just make the recipe by mixing the ingredients in a pot and cooking them on the stove top. Cooking time is only 30-45 min (approx.) and there's no soaking time in this case.
