Olive Garden Minestrone Soup Clone
INGREDIENTS
  • 1/4 cup Olive Oil
  • 1 small Sweet Onion, Diced
  • 2 Celery, Diced
  • 1 tsp Garlic Clove, Minced
  • 2 can Swanson Veggie Broth
  • 1 can White Or Great Northern Beans
  • 1 can Navy Beans
  • 1 can Light Red Kidney Beans
  • 1 large Petite Diced Tomatoes
  • 1 can Tomato Sauce
  • 1/2 cup Raw Carrots, Diced
  • 1 -2 Zucchini, Sliced
  • 1 1/2 tsp Italian Seasoning
  • Salt & Pepper To Taste
  • 3 cup Raw Spinach, Or Small Pkg Frozen, thawed
  • 1 cup Uncooked Elbow Macaroni, or Pasta of Choice
DIRECTIONS
  1. *Sauté in large pot olive oil, onion, celery, and garlic until onions are transparent
  2. *Add to the pot the rest of the ingredients, except the spinach and pasta
  3. *Cook about 30 minutes and add spinach and pasta
  4. *Serve with parmesan cheese, if desired
