Omelette cakes in a bacon cup

  • 2 eggs
  • Grated cheese
  • Splash of milk
  • Coconut oil
  • 3 rashers of bacon
  • Cherry tomatoes
  • Rocket
DIRECTIONS
  1. 1. Wisk eggs, milk and cheese.
  2. 2. Place 1 slice of bacon inside a muffin tray, repeat with 2 more.
  3. 3. Carefully pour the omelette mix into the bacon cups, and place sliced tomatoes on top.
  4. 4. Cook in the oven for 20 minutes.
  5. 5. When cooked, place the omelettes on a bed of peppery rocket.
