Onion-Asparagus Omelet

INGREDIENTS
- 1/2 pat of butter
- 1 slice of onion (whole or diced)
- 7-8 asparagus spears (1" pieces)
- 1 egg
- 1+ T. ranch dressing
- 1/2 tsp. milk or water
DIRECTIONS
- Put pan on stove, low heat, and melt butter.
- Add onion and asparagus.
- Put the lid on.
- Whisk together egg, ranch and milk.
- Pour gently over veggies.
- Put the lid on.
- Leave it alone for 6-8 minutes (for 1 egg) (3-4 eggs = 15 minutes.)

I have a tiny pan for making one poached egg.
Now, who makes one poached egg?...
It is, however, extremely useful for a one egg english omelet...it does have a lid...and I often use it. (The poaching cup is still in the never used cupboard)
You can use any small size pan as long as it has, or can be fitted with a lid. The recipe can be multiplied.
