Oyster Soup
INGREDIENTS

  • 2 dz. shelled oysters
  • 2 cups. milk
  • 2 pats butter
  • Contained
  • 1/8 cup celery, minced
  • 2 1/2‚ÄĚthick slices of boiled Potatoes
  • salt & pepper to taste
  • paprika.
DIRECTIONS
  1. Heat milk to boiling in a sauce
  2. pan, stirring Add celery &
  3. potatoes & cook for 5 to 6
  4. minutes. Mash potatoes,
  5. then add oysters & season with
  6. salt & red pepper to taste.
  7. Bring to boil again & simmer 3 to
  8. 5 minutes.
  9. Pour into soup plates. Place 1
  10. pat of butter on each serving and
  11. sprinkle with paprika
