Paulette's Beef Stew in Beer

- 1 1/2 lbs stew meat
- 2 yellow onions, sliced
- 1 t salt
- 1/2 t pepper
- 1/4 c packed brown sugar
- 24 oz beer - I use budweiser
- 1 can diced tomatoes
- 4 T roasted garlic
- 3 russet potatoes, peeled and cut in 1 1/2" pieces
- 2 carrots, cut in 2" pieces
- 3 stalks celery, cut in 2" pieces
- 1 sweet potato, peeled and cut into 1 1/2" pieces
- 1/4 c flour
- salt and pepper to taste
DIRECTIONS
- Place meat in slow cooker set to high, spread onions over top
- Add beer, diced tomatoes, salt, pepper and brown sugar
- Add vegetables and mix flour with small amount of water then add to mixture
- Once liquid comes to a boil, set to low and cover
- Cook for 4-6 hours or until meat is tender
- Add salt and pepper to taste
