Pear Cranberry Crisp
  • 3 very ripe pears, chunked
  • 1 cup whole cranberries
  • 1/4 cup maple syrup
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tbsp flour
  • 1 tbsp butter
  • 1/2 cup oatmeal
  1. Heat oven to 400.
  2. In a medium bowl, combine pears, cranberries, maple syrup, and lemon juice; toss and set aside. In another bowl, combine oatmeal, brown sugar, and flour.
  3. Cut in butter until consistency resembles coarse crumbs and dough just holds together.
  4. Spoon pear/cranberry mixture into a greased oval baking dish, top with dry mixture.
  5. Bake until topping is brown and crisp, about 10 minutes.
  6. Reduce heat to 350 and bake 20-25 minutes more, until fruit is bubbling.
  7. Serve with vanilla bean ice cream.
