Pecan Puffs

  • 1/2 cup butter
  • 2 Tbsp sugar
  • 1 tsp vanilla
  • 1 cup pecan meats
  • 1 cup cake flour
  • Powdered Sugar
  1. Preheat oven to 300° Beat butter until soft, add sugar & blend until creamy, add vanilla.
  2. Measure then grind in a nut grinder, food processor or chop finely with a knife the pecans.
  3. Stir pecans into butter mixture and sift in flour. Roll the dough into small balls, place balls on greased cookie sheet & bake about 30 minutes.
  4. Roll while hot in powdered sugar to coat. To glaze, put the sheet back in the oven for a minute.
Also known as Mexican Wedding Cookies. Favorite of my wife, so an extra batch or two is always required. A very traditional cookie during the holiday season. Similar types, with different spices, include almond crescents and Pfefferneuse.
