Plain Yellow Cake

  • Preparation Time: 15 mins.
  • 3/4 cup (1-1/2 sticks) margarine, softened
  • 1-1/2 cups sugar
  • 3 medium eggs
  • 2 tsps. vanilla extract
  • 1 tsp. salt
  • 3 tsps. baking powder
  • 3 cups flour
  • 1-1/4 cups milk
DIRECTIONS
  1. Preheat oven to 350F
  2. Cream together margarine & sugar until they are light & fluffy.
  3. Add all 3 eggs, vanilla & salt, beat until the ingredients are well mixed.
  4. Add the baking powder, flour & milk. Beat again until well mixed.
  5. Beat for 2 full mins. at high speed. The mixture should begin to look light, smooth, & creamy.
  6. Whatever pan you decide to use make sure it is well oiled.
  7. 2-9" layer cake pans...bake 25 to 30 minutes
  8. 9x13" rectangular pan....bake 35 to 40 minutes
  9. Cup cakes....increase oven temp. to 375....bake appx. 20 minutes-makes 28
