Plum Nut Bread

  • 2 cups diced purple prune plums
  • 1 cup butter or margarine
  • 2 cups sugar
  • 1 tsp. vanilla
  • 4 eggs
  • 3 cups enriched all-purpose flour
  • 1 tsp. iodized salt
  • 1 tsp. cream of tartar
  • ½ tsp. baking soda
  • ¾ cup plain yogurt
  • 1 tsp. grated lemon peel
  • 1 cup chopped walnuts
DIRECTIONS
  1. Prepare plums.
  2. Cream butter or margarine with sugar and vanilla until fluffy.
  3. Add eggs one at a time; beat after each.
  4. Sift together flour, salt, cream of tartar, and baking soda.
  5. Blend yogurt and lemon peel; add to creamed mixture alternately with dry ingredients.
  6. Stir until well-blended.
  7. Add chopped plums and nuts; mix well.
  8. Divide between two greased and floured 9x5 inch loaf pans.
  9. Bake in preheated 350° oven for about 50 to 55 minutes or until bread tests done.
