Potato Dressing
INGREDIENTS
  • Cooking Time: 40
  • 3/4 cup celery and leaves, chopped
  • 1/2 cup boiling water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper, freshly ground
  • pinch of saffron, optional
  • 2 cups mashed potatoes, left over or freshly prepared
  • 2 eggs beaten
  • 2 cups bread cubes
  • 1 cup milk
  • butter
DIRECTIONS
  1. Cook the celery in the water with the salt, pepper, parsley and saffron if using, until soft, about 10 minutes. Lightly mix with the potatoes, eggs bread cubes milk, (and dry gravy mix of your choice.) Spoon into a well buttered casserole dish, dot the top with butter and bake in a 350 degree oven for 40 minutes.
