Proscuitto Wrapped Fingerlings W/fresh herbs

  • 1 bag fingerling potatoes
  • 1/2 lb thin sliced prosciutto(you could also use german speck)
  • 1 tbls each fresh chive,basil,thyme and rosemary
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup olive oil
  1. Boil a pot of water and par boil potatoes about 8 min,rinse under cold water until cool,pierce potatoes with a pairing knife about ten pokes all over potatoes,place potatoes in a plastic bag,add the herbs,salt,pepper and garlic powder to the oil it will be thick like a paste,pour into bag and place in fridge for about 1/2 hour,now time to wrap,take a piece of meat and carefully wrap around potato(prosciutto tears very easy)once potatoes are wrapped place on a sheet pan lined with foil and sprayed with pam or greased with shortnening(important so they don't stick to foil)and bake at 400 for about 30 to 35 min or until prosciutto is crispy,let cool and enjoy
I got this idea while i was reading blogs,he used a sous vide technique first,but i just par boiled mine,I also added my herb mix i use on potatoes
