Pumpkin Bread Pudding

  • 1-15oz can pumpkin
  • 2 cups milk
  • 3 egg yolks
  • 1/2 cup sugar
  • 1/2 cup chopped pecans
  • 1 lb cubed cinnamon-raisin bread
  • 2 chopped apples
DIRECTIONS
  1. Whisk pumpkin, milk, egg yolks, sugar and chopped pecans in a large bowl. Fold in cubed bread and apples. Spread in a buttered baking dish and refrigerate 2 hours, then bake 375F until set, 45 minutes.
