Pumpkin Crunch

INGREDIENTS
  • 15 oz. pumpkin, solid pack
  • 12 oz. evaporated milk
  • 3 eggs
  • 1 1/2 c. sugar
  • 1 t. cinnamon
  • 1/2 t. salt
  • 1/2 c. chopped pecans
  • 1 c. butter, melted
  • 1 box Yellow cake mix
  • Cool whip
DIRECTIONS
  1. Combine pumpkin, evaporated milk, eggs, sugar, cinnamon & salt.
  2. Pour into a greased 9x13 pan.
  3. Sprinkle dry cake mix on top.
  4. Top with pecans. Drizzle melted butter evenly over pecans.
  5. Bake at 350 degrees for 50-55 min.
  6. Cool... serve chilled with a dollop of Cool Whip.
