Pumpkin Pancakes With Cinnamon Syrup

  • 1/3 cup of pumpkin
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1/4 tsp. ginger
  • 1/4 tsp. nutmeg
  • When mixing batter make sure it isn’t too smooth. Don’t over mix. Use butter or Crisco on your griddle.
  • Cinnamon Syrup
  • 1/2 cup of sugar
  • 1 Tbs. cornstarch
  • 1 tsp. cinnamon
  • 1 cup apple cider
  • 1 Tbs. lemon juice
  • 2 Tbs. margarine or butter
DIRECTIONS
  1. In small pan combine sugar, cornstarch, and 1 tsp. cinnamon. Blend well. Stir in apple cider and lemon juice. Cook over medium heat until mixture comes to a boil and thickens. Remove from heat. Add butter and stir until melted. Keep warm
