Pumpkin Pecan Cupcakes
INGREDIENTS
- 1 pkg spice cake mix
- 1 15 oz can solid-pack pumpkin
- 3 eggs
- 1/2 cup vegetable oil
- 1 tbs cinnamon
- 1 tsp baking soda
- 1/4 tsp ground cloves
- 24 pecan halves
- ground cinnamon
DIRECTIONS
- In a large mixing bowl, combine spice cake mix, pumpkin, eggs, oil, cinnamon, baking soda and cloves. Beat on medium for 2 minutes. Fill paper lined cups and press i pecan half into each. Bake at 350 degrees for 22-26 minutes. Cool five minutes in pan, move to wire rack and cool completely. Frost with your favorite cream cheese frosting and sprinkle cinnamon on top.
