Rabbit Creole

  • 1 3 lb. rabbit, cut-up into pieces
  • 1/2 cup butter
  • 3 ribs. celery chopped
  • 1/2 cup tomato sauce
  • 1/2 lb. fresh mushrooms, sliced
  • 1 bell pepper, chopped
  • 1/2 cup flour
  • 1 pk. onion soup mix
  • 1 can Ro-Tel tomato mashed
  • 3/4 cup water
  • 2 tbsp. green onions,
  • chopped.
  • 1 tbsp. Lea & Perrin
  • 1 tsp. red pepper
DIRECTIONS
  1. Season rabbit w/salt ,pepper
  2. Dredge in flour. Heat 1/2 cup
  3. butter in a large pot & brown the
  4. rabbit pcs. Remove rabbit & add
  5. onion, bell pepper and celery.
  6. Sauté’ 4 minutes.
  7. Add tomatoes, tomato sauce,
  8. water, Lea & Perrin & red pepper.
  9. simmer 7 minutes, add rabbit.
  10. Cover & simmer over low heat
  11. until rabbit becomes tender.
  12. Sauté the mushrooms & green
  13. onions in 2 tbsp. butter pour
  14. over rabbit. serve over rice
