Raspberry Filled Cookies
INGREDIENTS
  • Cooking Time: 12
  • 1 lb. butter
  • 1 cup sugar
  • 4 egg yolks
  • 2 tsp. grated lemon rind
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 5 and 1/3 cups all purpose flour
DIRECTIONS
  1. Preheat oven to 375 degrees
  2. Cream together butter, sugar, egg yolks.
  3. Add lemon rind, vanilla, and salt.
  4. Blend 4 cups of flour.
  5. With the rest of the flour, knead the dough.
  6. Wax wrap and refrigerate a few hours.
  7. Roll out (part at a time) 1/4 inch thick.
  8. Cut with a 2 inch cookie cutter.
  9. Tops should have a small cutout in the center.
  10. Bake at 375 for about 12 minutes or until lightly brown.
  11. When cool spread with raspberry jam!
