Red Pepper Mango Salad
INGREDIENTS

  • 1 red pepper
  • 1 tsp. white rice vinegar
  • pepper to taste
  • 1 tsp. roasted sesame seeds (optional)
  • 1 firm mango
  • 1 tsp. toasted sesame oil
  • 1 tbsp. cilantro, chopped
DIRECTIONS
  1. Peel the mango and cut it away from the pit.
  2. Slice into thin sticks, this is much easier if the mango is firm and slightly unripe.
  3. Slice the red pepper into matchsticks.
  4. Roast the sesame seeds at 350 degrees for about 5 minutes, or use them plain, or use the black ones.
  5. Toss the pepper and mango
  6. Drizzle sesame oil and rice vinegar over top and sprinkle pepper and cilantro.
  7. Add the dressing ingredients to taste.
