Red onion marmalade

INGREDIENTS
  • 30g butter
  • 2 red onions, finely sliced
  • 2 tbsp brown sugar
  • 1 tbsp balsamic or red wine vinegar
  • 1 glass red wine
  • 2 tbsp red currant jelly
DIRECTIONS
  1. Melt the butter in a frypan and soften the onion. Add the remaining ingredients and simmer to reduce until a think paste. Keeps well in fridge.
RECIPE BACKSTORY
This recipe came from a cooking demonstration held at Nokomai Station. Red onion marmalade is great on crostini with rocket leaf and a slice of camembert as a nibble.
