Rice Pilaf

  • 3 TBS butter
  • 2 onions, finely chopped
  • 3 cups uncooked long grain rice
  • 1 1/2 quarts chicken broth
  • salt & pepper to taste
DIRECTIONS
  1. In a heavy casserole saute onions in butter until tender but not browned.
  2. Add rice and cook, stirring until rice appears transparent.
  3. Add broth and bring to a boil.
  4. Season with salt & pepper.
  5. Cover and bake at 350ยบ for 20 minutes.
  6. Let stand 10 minutes.
  7. Stir to fluff and serve.
