Rice Pudding with Soy Milk

- Butter for baking dish
- 2 cups Basmati rice, cooked
- 4 eggs
- 2 cups soy milk
- 1/2 cup sugar
- 2 tablespoons melted butter
- Grated rind of 1 lemon
- Juice of 1/2 lemon
- 1/2 cup raisins
DIRECTIONS
- Preheat the oven to 350 degrees. Butter a baking dish and add the rice.
- In a large mixing bowl, beat the eggs with a whisk until frothy. Add the rest of ingredients and mix thoroughly. Pour these ingredients over the rice, combining well with a fork.
- Bake the pudding until set, about 40 to 50 minutes.
