Rice Pudding with Soy Milk

  • Butter for baking dish
  • 2 cups Basmati rice, cooked
  • 4 eggs
  • 2 cups soy milk
  • 1/2 cup sugar
  • 2 tablespoons melted butter
  • Grated rind of 1 lemon
  • Juice of 1/2 lemon
  • 1/2 cup raisins
DIRECTIONS
  1. Preheat the oven to 350 degrees. Butter a baking dish and add the rice.
  2. In a large mixing bowl, beat the eggs with a whisk until frothy. Add the rest of ingredients and mix thoroughly. Pour these ingredients over the rice, combining well with a fork.
  3. Bake the pudding until set, about 40 to 50 minutes.
