Rice with tomatoes, onions, and oil

INGREDIENTS
  • 1 tsp Tomato Paste
  • 2 Onions diced
  • 3 cups vegetable oil
  • 3 Cups cooked white rice
  • 1 Large Tomato de-seeded and diced
  • 1 Tsp Paprika
  • Salt & Pepper to taste
DIRECTIONS
  1. Boil onions in oil, once brown (not burned) drain and save the oil. Mix the drained onions into the rice
  2. Mix in the tomato paste and salt, pepper, and paprika.
  3. Rice shouldn't be too dry. Top with diced tomato. You can add more of the oil if dry or save to flavor other meals.

Love this! I like to have cold tomatoes not warm. You can even use frozen onions instead of fresh to save time.
