  • 1 15 OUNCE CONTAINER RICOTTA CHEESE
  • 2 teaspoons VANILLA
  • 2 LARGE EGGS
  • 4 CUPS FLOUR
  • 2 TABLESPOONS BAKING POWDER
  • 1 TEASPOON SALT
  • 1 1/2 CUPS 10X SUGAR
  • 3 TABLESPOONS MILK
DIRECTIONS
  1. PREHEAT OVEN TO 350 DEGREES. IN LARGE BOWL AT LOW SPEED, BEAT SUGAR AND BUTTER UNTIL BLENDED. iNCREASE SPEED TO HIGH; BEAT UNTIL LIGHT AND FLUFFY, ABOUT 5 MINUTES. BEAT IN RICOTTA, VANILLA AND EGGS. REDUCE SPEED TO LOW AND ADD FLOUR, BAKING POWDER AND SALT. DROP DOUGH BY TABLESPOON 2" APART ON UNGREASED SHEETS. BAKE 15 MINUTES UNTIL VERY LIGHTLY GOLDEN. REMOVE COOKIES TO WIRE RACK TO COOL. WHEN COOKIES ARE COOL, PREPARE ICING WITH POWDERED SUGAR AND WATER. CAN SPRINKLE WITH COLORED SUGARS.
