Roasted Red Pepper Salsa

  • Preparation Time: 10 minutes
  • 3-4 ears of corn (you'll need about 2 cups)
  • 2 medium tomatoes, diced
  • 7 oz. roasted red peppers
  • 2 green onions, chopped
  • 3 Tbls. cilantro, chopped
  • 1 jalapeno, seeded and chopped
  • 2 Tbls. lime juice
  • 1 Tbls. white vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cumin
  • 2 avocados, diced
  • olive oil
DIRECTIONS
  1. Brush ears of corn with a little olive oil
  2. Place on a hot grill and grill until browned on all sides
  3. Scrape off kernels
  4. Gently toss ingredients (except avocado) to combine
  5. Refrigerate at least an hour before serving
  6. Add avocado just before serving
