Ruth's coconut/banana cake
INGREDIENTS
  • Cooking Time: 35-40
  • Servings: 10 to 12 servings
  • Preparation Time: 15 minutes
  • cake:
  • 1 yellow cake mix
  • 1 stick of butter room temp
  • 3 eggs
  • 1/2 teas butter flavor
  • 1/2 teas vanilla extract (coconut if you have)
  • 3 bananas mashed well
  • 1/4-1/2 cup coconut milk
  • icing is: 1/2 to 1 cup cool whip and 1 stick of butter room temp whipped
DIRECTIONS
  1. in large bowl mix butter and eggs well
  2. add flavors butter and vanilla
  3. add yellow cake mix
  4. add coconut milk and bananas stir well
  5. spread into pans
  6. bake at 375 for 35-40 minutes
  7. cool turn onto plate
  8. whip icing
  9. frost and chill
RECIPE BACKSTORY
I used to make banana cake then my husband (who is from Jamaca, WI) loves coconut. I decide to combine and this is a very moist, quick and delisious treat.
