Sabzi Polo [Herb rice]

  • 3 cups of water
  • 2 cups of Basmati rice
  • 2 tablespoons of vegetable oil
  • a small bunch of fresh dill, chopped
  • a smal bunch of cilantro, chopped
  • a small bunch of parsley, chopped
  • 2 cups of horse beans
  • ground turmeric to taste
  • ground cinnamon to taste
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
DIRECTIONS
  1. 1 Bring water to the boil in a big pot, stir the rice into the boiling water, reduce the heat and simmer for 5 minutes.
  2. 2 Drain the rice, stir in the oil and half a cup of water
  3. 3 Add the herbs, horse beans, turmeric, cinnamon, salt and pepper
  4. 4 Cover and simmer on the lowest heat for 40 to 45 minutes
  5. NB Don't be surprised to find some crispy rice on the bottom of the pot after cooking. The crispy rice tastes very good too.
