Salsa Fresca

INGREDIENTS
- 1 tablespoon finely chopped garlic
- 1 finely chopped red onion
- 6 large tomatoes, blanched, peeled, seeded and chopped
- 1 large mild chile, such as Anaheim, seeded and chopped
- 16 oz drained, washed canned black beans
- 3 tablespoons chopped cilantro leaves
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 2 tablespoons virgin olive oil
- 1 diced, seeded fresh jalapeƱos
- 1 clove garlic minced
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon hot pepper sauce
- Coarse sea salt and pepper to taste
DIRECTIONS
- Chop veggies finely and put in a large bowl. You can also process it coarsely in a food processor. Add everything else. Let stand for 30 minutes before serving.
- To make a creamy version, blend in 16 oz of sour cream or add 2 large avocados, seeded and peeled (optional)
