INGREDIENTS
- Cooking Time: none
- Servings: 4
- Preparation Time: 15 minutes
- 3 medium size tomatoes
- 1 mango
- 1 red or yellow pepper
- 1/4 cup red onion
- 1 Hot pepper
- 1 TBSP raisins or diced dates
- 1 lime juiced
- 1/4 cup fresh cilantro
- 3 Tbsp chives or green onion
- 1/4 tsp cayenne pepper
- 1/2 tsp chipotle chili powder
- dash of sea salt and olive oil is optional
DIRECTIONS
- Dice the tomatoes, mango, bell pepper, onion, hot pepper, raisins.
- Rough chop the cilantro, snip the chives or green onion.
- Toss all ingredients in a large bowl.
- Stir in the lime juice, spices and optional salt/oil.
- Refrigerate and allow the flavors to blend.
- Taste it and add more spice if you wish.
- Stays fresh in the fridge for a couple of days.
RECIPE BACKSTORY
This recipe is very versatile.
It is not necessary to follow it exactly.
No mango? use peach, pineapple, pear or more raisins/dates
No worries if you don't have or like cilantro, leave it out.
Raw onion bother you ? add a different color bell pepper instead.
