Sashlik With Plum Sauce

  • Sashlik:
  • 600 g pork tenderloin
  • 100 g dried soft plums
  • 2 challot onions
  • 1 dl Dry red wine
  • salt and coarce black pepper
  • butter
  • Plum sauce:
  • 2 small onions chopped in very small bits
  • 2 tbsp butter
  • 100 g dried soft plums
  • 5 dl dry red wine
  • salt
  • coarce black pepper
  • 1/2 tsp Groung Clove
  • 1/2 tsp Brown Sugar
  • Juice from 2 Limes
DIRECTIONS
  1. Chop pork in cubes.
  2. Cut Challots in cubes ja cook over a low heat for few minutes.
  3. Thread the pork, plums and onions to oiled metal skewers.
  4. Heat butter in a sauce pan, add onion, cook until onion is soft.
  5. Add Plums and Red wine.
  6. Cook over low heat about 30 min until plums are very soft.
  7. Season with salt, pepper, clove, sugar and lime juice.
  8. Let sauce cool down.
  9. With a blender mix it to smooth sauce.
  10. Grill the Sashlik Skewers until they are nicely browned.
  11. Baste with butter during cooking.
  12. Season in the end with salt and pepper.
  13. Serve with rice and red wine such as Merlot
