Sausage & Peppers
INGREDIENTS
  • 8 links Italian sausage
  • 24 ounces crushed tomatoes
  • 1 large red sweet bell pepper -- sliced
  • 1 large yellow sweet bell pepper -- sliced
  • 1 large onion -- sliced
  • 6 cloves garlic -- minced
  • 1/4 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 4 tablespoons olive oil
  • 1 teaspoon crushed red pepper
  • 1 large bay leaf
  • 1/2 pound mushrooms -- sliced
  • 1 tablespoon balsamic vinegar
  • 1 medium green tomato -- quartered
  • 1 cup white wine
  • 1 teaspoon sugar
  • 2 teaspoons kosher salt
DIRECTIONS
  1. Core and slice the pepper and slice the onion 1/2 inch thick. Saute the onions and peppers in the olive oil until transparent. Add all spices and garlic. Adjust amount of crushed red pepper according to heat desired.
  2. Add the sausage links on top of the mixture. Add the garlic, vinegar, wine, and remaining ingredients. Cover and cook on medium heat. Turn sausages frequently trying to keep them on the pan with the onions on top so the cook thoroughly. Adjust seasonings, adding salt and pepper to taste
