Savory black bean soup

  • 2 cans black beans, drained in colander
  • 2-3 cups chicken broth
  • 2 cloves mashed garlic
  • 1 medium onion, chopped
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 teaspoons ground cumin
  • 2 tablespoons fresh cilantro
  • 1 tablespoon minced Chipotle Chile in Adobo
  • 1 tablespoon fresh lemon juice
  • Cajun Seasoning, to taste
  • Garnishes: fresh chopped avocado, chopped cilantro, shredded Monterey Jack cheese, sour cream

  2. Ingredients:
  3. 2 cans black beans, drained in colander
  4. 2-3 cups chicken broth
  5. 2 cloves mashed garlic
  6. 1 medium onion, chopped
  7. 1 bay leaf
  8. 1 teaspoon dried thyme
  9. 1 teaspoon dried oregano
  10. 2 teaspoons ground cumin

  14. Cajun Seasoning, to taste

  16. Method:
  17. Chop all herbs and place everything except for garnishes in large pot and bring to a boil — lower heat and simmer until beans and vegetables are tender. Puree with a hand blender carefully in the pot, continuing to cook for 15 to 20 minutes over low heat. Ladle into bowls and pass the garnishes at the table.
