Shrimp Cocktail
  • 1 1/2 pounds of shrimp (25 count)
  • 1/8 heaping cup of salt
  • 1/4 C sugar
  • 1 C water
  • 2 C ice
  • Old bay
  • Olive oil
  1. Place metal bowl or cookie sheet in freezer (to cool hot shrimp after cooking)
  2. Dissolve sugar and salt in water
  3. Add ice to cool
  4. Add shell on deveined shrimp to brine
  5. refrigerate for 20 minutes
  6. Preheat foil lined broiler pan for 5 minutes on high broil
  7. Rinse and dry shrimp
  8. Add 1-2 T olive oil to large bowl, add shrimp and sprinkle with Old Bay.
  9. Toss and add more Old Bay until desired seasoning amount is added
  10. Add shrimp in a single layer to broiler pan
  11. Broil for 2 minutes, turn shrimp with tongs
  12. Broil for additional minute
  13. Transfer to cold cookie sheet or bowl
  14. Leave in freezer for 5-15 minutes
  15. Do not leave in freezer for more than 15 minutes or freezing may occur
