Shrimp Creole with Quinoa

- 2 Lbs Shrimp
- 1 cup of Quinoa
- 1/4 cup chopped onion
- 2 Tbsp chopped red pepper
- 1/2 cup chopped celery
- 2 chopped tomatoes (deseeded)
- 1/2 cup garlic stuffed olives
- 2 Tbsp EVO olive oil
- 1/4 tsp salt
DIRECTIONS
- Sautè onion, pepper and celery in the olive oil until tender, not brown.
- Add tomatoes and simmer gently for about 20 minutes.
- Clean Shrimp and set aside.
- Cook quinoa according to directions.
- Add shrimp and olives, cook another 10 minutes or until shrimp is cooked through.
- Serve on a bed of Quinoa
