Shrimp Creole with Quinoa
INGREDIENTS

  • 2 Lbs Shrimp
  • 1 cup of Quinoa
  • 1/4 cup chopped onion
  • 2 Tbsp chopped red pepper
  • 1/2 cup chopped celery
  • 2 chopped tomatoes (deseeded)
  • 1/2 cup garlic stuffed olives
  • 2 Tbsp EVO olive oil
  • 1/4 tsp salt
DIRECTIONS
  1. Sautè onion, pepper and celery in the olive oil until tender, not brown.
  2. Add tomatoes and simmer gently for about 20 minutes.
  3. Clean Shrimp and set aside.
  4. Cook quinoa according to directions.
  5. Add shrimp and olives, cook another 10 minutes or until shrimp is cooked through.
  6. Serve on a bed of Quinoa
